This describes to me a lot of music that goes back at least 100 years
....

exactly.

blues, dub, jazz, chanting, african drumming, electronica, classical
(think Debussy), trip hop, ambient, etc, etc.

I think some of the defining factors for this are that it has more of a
mental space, has few (if not 0) 'pop' sensibilities and normally sound
best on headphones.

sounds like the makings for a good mailing list...
