Why don't you start with the "original human beat box" Doug E. Fresh
and MC Ricky D (Reality Records c. 1985). They are suppossed to be
releasing their greatest hits relatively soon if not already. These
people didn't need synths or drum machines -- they did it all with their
mouths.

Even though it's not hip hop, I'd also encourage you to check out
Bobby McFerrin (Sony). He does some amazing rhythms with his voice alone.
He is best known for his cheesy pop song "Don't worry be happy", but his
stuff goes a long way from that.
